I’m always looking for a way to incorporate foods that I don’t like including broccoli and nuts. The only way I’ve ever been able to eat broccoli is soggy with cheese and I’ve only ever been able to stand nuts in ice cream – yuck! For tonight’s dinner, I went out on a limb and combined both ingredients and am thrilled with the result!
As always, soak whatever nuts you use to get a creamier consistency and to get the most out of the enzymes.
Why am I so adamant about getting broccoli in my diet? Here are only a few reasons: It’s high in calcium and vitamin K – both great for bone health, it has a huge impact on your body’s detoxification system, is a great anti-inflamatory and helps reduces allergies. It has more calcium than a glass of milk, far more vitamin C than an orange and a whole lot more fiber than a slice of wheat bran bread. It’s also a great source of protein, helps prevent cancer and is helpful in repairing sun damage!
- 1/2 cup pistachios, raw (soaked)
- 1/2 small onion
- 1/4 cup (filtered) water
- 3 tbs raw apple cider vinegar
- 2 tbs honey
- Sea salt
- Trader Joe's organic broccoli slaw or other shredded raw vegetables
- Combine all ingredients in a blender
- Toss through slaw
Feel free to substitute with most any raw vegetable including zucchini, cabbage, radishes or anything else you can shred using a vegetable spiral slicer. You can also swap the pistachios for your favorites i.e. almonds, cashews, etc.
This dish is best served after it's marinated for an hour or overnight but is still delicious when served immediately.
To go along with my slaw, I had one of my favorite snacks, Toast with Avocado, as a side dish.
