It’s been one busy week with the Bikini Body Mindset Transformation 4-day training going on! Thankfully, I still managed to stop and take some pictures of what I ate throughout the day and I’m ready to share.

Ok, back to today. I got up this morning unusually early i.e. 5am (that’s early even for me) and started writing. Get ready for some awesome blog posts coming up!
As much as I love my warm lemon water first thing in the morning, I like to switch it up to keep it interesting. This morning, I had a spoonful of the Vitamineral Green superfood in a glass of water. This is easily my favorite brand when it comes to supplementing my diet with an extra oomph of nutrition. If you don’t get your veggies in (but I encourage that you do), this is a great way to start.
If you’re in LA, you know how hot its been the last few days. Phew! If I didn’t sweat enough at the gym, I sure looked like I did by the time I finished walking home. The entire walk, I just kept thinking how nice it would be to have some watermelon.
Needless to say, I ended up buying a giant seeded watermelon on my way back and happily indulged in as soon as I could. Seeds included. I promise they won’t grow a watermelon in your belly. (Did your parents tell you that too?!) They’re seriously good for you. I dare you to try them next time you have some watermelon. Some watermelon seeds even taste good too. The flesh from this particular watermelon was delicious but the seeds were mediocre.
This is my new favorite kombucha. I drank half of this as I was cutting the watermelon.
I was swamped all day so I didn’t get a chance to eat my main first meal until nearly 3pm. It’s yet another variation of my favorite carrot salad. But really, I switch up the ingredients so frequently, that it may as well be an entirely different salad.
Today I topped it with toasted sunflower seeds, hemp hearts and green chives from the market.
After my carrot salad, I wanted something sweet. I eat some variation of dessert most every day.
This jar of almond butter was already half empty so today I made an easy chocolate fudge right in the container. I added some coconut oil, maple syrup and cacao.
You could easily freeze this on parchment paper to give it a more genuine fudge-like texture, but I rarely make it that far. I eat it right out of the jar, screwed the lid back on and put it right back in the fridge for next time.
This tastes great with raw as well as toasted almond butter and especially good with organic peanut butter.
- 1/2 cup almond butter (or other nut butter)
- 2 tbls maple syrup
- 2 tbls coconut oil (softened)
- 4 tbls raw cacao powder
- 1/4 tsp sea salt (if almond butter isn't already salted)
- Mix all ingredients together and adjust the ingredients as needed. Enjoy!
- If you want a fudge-like texture, put on parchment paper inside a small freezer-safe container until ready. (Approximately 15 minutes.)
For dinner, I made one of my go-to dishes, red lentils with raw garlic and red chili pepper flakes. I wanted to have some greens too so I cut up some lettuce and tossed the hot lentils right on top and let the lettuce wilt. I mixed in a squeeze of fresh lemon juice and salt and then topped the dish with fresh chives and the other half of my avocado leftover from lunch.
And then I followed it up with some more watermelon for dessert.
