Happy What I Ate Wednesday, friends!
The biggest question I get asked all the time is, “what do you eat on a day to day basis”. So here it is! This is the day where I’ll share all the foods I ate with you. I’ll do my best to do this every couple of weeks or so but no promises!
The truth is, my food rarely looks this good and it sure takes a lot of extra time to stop, arrange and take the pics. And since I’m all about living in the moment, that’s hard for me to do. When it’s time to eat, I want to eat. But I’m going to do my best!
Speaking of living in the moment. That’s precisely what my next post will be about. It’s a good one!

I started my morning with lots of water and a spoonful of organic ACV (apple cider vinegar) and then had a delicious plum that I picked up at the farmers market this past Sunday. After I got back from the gym, I decided to try this new probiotic drink I discovered at Target recently.
I didn’t love it so won’t be buying it again. It would be a great drink for someone who’s transitioning off of soda; however, it has a strong stevia taste which I don’t like. Bad me for not looking at the ingredients! I wouldn’t have bought it if I’d known that.
And then I had my favorite… Carrot Salad! It’s a little bit different every day. You can see in the above pic which ingredients I had on hand to put in it today.
I ended up eating the other half of the avocado and then a piece of toast with ghee and sea salt. Then I decided to snack on a small handful of dry-roasted unsalted almonds with un-sulphured cherries.
I typically only eat two big meals a day so I just had a snack later (which I shouldn’t have because I wasn’t hungry). But I just couldn’t resist. The fresh basil leaves have had my name all over them since I brought them home from the market. I ended up making some homemade pine nut pesto with carrot sticks. Easy and delicious!
- 1/4 cup olive oil (garlic infused would be awesome too!)
- Large handful of basil
- 1/2 small lemon juiced
- 2 tbsp water
- 1 tsp raw organic honey
- Sea salt to taste
- Put all ingredients in a small chopper or blender and blend until smooth.

We went to Rahel’s Vegan Ethiopian Cuisine. The food was great! Most of us ordered a special and they’re huge! We could easily have split them.
Most of the restaurants in Little Ethiopia here seem to have gluten free injera which is incredible. It was so nice to be able to indulge. As I’m writing this, it’s the next morning and I’m still stuffed!
